Preface - Keno ?
The why-s (wise) story of Bengali Cuisine???
it is the first question that you tend to ask yourself when it comes to doing anything that one does. I tend to ask this question right at the beginning of all my endeavours.
Food as have known it has been the center-point of all my activity ever since I remember myself. It has been fairly central to my family as well as the activities that I have grown up with. I am sure food is a central theme and cause when it comes to most to of the families and culture.
Unforntunately, I was unable to find a single book that talks about the history and evolution of Bengali food. A book that tells about the cultural binding's and relationships but the prevelant economics or politics of the land.
Where does "Fuchka" / " Egg Roll" come from?
How did Bhate or Paaturi style of preparation come into being?
How did the famines / floods influence the-then contemporary cooking styles ?
How did the economics/politics of the land ... British rule / Mughals / Chinese immigration / Bihari labor migration / partition of India influence the cuisine ?
There is but a book you will find that talks about the story.
I think this would be quite a story to tell.
